Vegan Ranch Dip

When you're looking for a delicious, but light vegan dip to pair with your favorite gluten-free chips or veggies, look no further than this recipe from @cookwith.cam.

Ingredients

  • 1 cup raw cashews, sour cream
  • 1/2 cup water, sour cream
  • 1 tbsp lemon juice, sour cream
  • 3/4 tsp apple cider vinegar, sour cream
  • 1/2 tsp salt, sour cream
  • 1/2 cup white onion, carmelized
  • 2 tsp coconut aminos
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 1/4 tsp onion powder
  • 1 tbsp fresh chives, chopped
  • gluten-free chips or veggies, for dipping

Directions

  1. Add your cashew sour cream ingredients to a high speed blender and blend on high until creamy. For easier blending, soak cashews in water overnight.
  2. Sauté onion in a medium skillet until fragrant. *Option to add in a small amount of veggie broth in the pan and let it evaporate, roughly ¼ cup.
  3. Add all remaining ingredients, except for the chives, to the cashew sour cream.
  4. Mix well and top with chives.
  5. Enjoy with gluten-free chips or your favorite veggies.
